Find minimum size for Linux which allows us to run server (must pass all tests, maven required) currently we uses standard minimal JRE 11 openjdk:11-jre-slim

It can happen if server is slow, there are some time-related checks, which can fail in this case. Have you tried w/o docker?
I am investigating. We need create org in DockerHub https://hub.docker.com/billing/core/purchase?type=organization
Also, better name image as memcached-carrot. It will be in search for any memcached products in DockerHub. Where official docker image is memcached:latest
Finally we stood up with bellsoft/liberica-openjre-alpine:21.0.4-9-aarch64 and bellsoft/liberica-openjre-alpine:21.0.4-9-x86-64
