Feature: Update Rollups 1.0.0 and wire subsquid #118

Summary

Updating the graphql generation to look to Subsquid API instead of subgraph. Upgrade the cartesi/rollups to v1.0.0

Changes:

Removed all subgraph definitions.
Removed Ethereum Goerli testnet.
Added Ethereum Sepolia testnet information.
Update the docker definition and CI for image generation.
Update the home page with all the new graphQL queries and types.
Update the codegen to be pointing to Subsquid API.
Upgrade cartesi/rollups to v1.0.0.
Remove tests and components not used in the App.
Update all the tests affected by the above changes.
