#41 Update ethers dependencies #42

Updated ethers dependencies to latest stable version. I had to do some tweaks to the storybook config to make those work.

Also, I had to do some changes in apps/staking to fix ts errors there caused by incompatibility between its ethers version and the one used in packages/utils. Those changes will be addressed (and reverted) once we bump dependencies for apps/staking.
