Things to start out plotting:

Find number of satellites under fix info for gnss1 and 2 (can look at message definition for details)
Plot diagonal of the covariance (both gnss1 and 2) (under gnss1/2 odom)
Third, if can sort out... plot the value under fix_info that says whether we have an lte connection
