Init tests #21

This branch aims to create a bunch of first tests about deidentification. It also configures Github Actions to launch pytest.

In the config.py file, we have a forced_values dict. I think it is unused. @Hboni can you check that point ?

@jordancorns You were right, I also removed another class unused :wink:
