Optimize backups #58

Thoughts:

  1. don't backup entire folder, just the alpha or beta in use
  2. save one backup permanently a week, otherwise cycle out old backups
  3. organize backup folders by alpha/beta

This is improved through AWS backups. But need to transition to EFS
