Tweak MANIFEST.in #196

I think we should decide what the source distribution should contains. There are basically two options:

  1. All files required to install the package
  2. All files under source control

Currently, we're mixing these things, because we're including e.g. .github/ and readthedocs.yml, but not mkdocs.yml or docs/. WDYT?

I don't have a strong opinion on that, but would vote for 1., as I think the primary use of the source distribution is to install the package on a platform for which no wheels are available.
