Alternatively, we could get a sheet of fiberglass reinforced panel at Home Depot for $23. Designed to make sure nothing sticks to it, and to be really easy to clean.
Cool. That could be much easier. Does it cut with scissors or do we need a saw? I see it's 1/16th of an inch thick.

Note sure - haven't worked with it yet. I doubt it can be cut with ordinary scissors, although something like metal shears might work. Dremel should work fine. We have a jigsaw as well, and I know Omni has a Sawzall, but that's probably overkill.
There's also a circular saw, but we have metal shears. I hope it's not something too heavy. We've already replaced the foam with a particle board top. We also installed a lower level particle board shelf, and replaced the previous wood holding together the table with 2x4's. The base is much more sturdy now.

Lots of good tips online for how to cut FRP. Consensus seems to be that it causes a lot of nasty dust since it's fiberglass reinforced. So score with a box cutter and snap, or use tin snips or electric metal shears.

The benchtop needs a coat of white paint and lacquer so the surface is easy to clean.
