I believe the method for unlearning Gnomish or Goblin engineering in 2.0.3 was to click on the big scroll in the hut near Steamwheedle in Tanaris (around 66,20). Yet, this option does not seem to be available.
Further, completely unlearning engineering and rebuilding the profession to 375 does not remove this specialty. The extra button in the spellbook for Gnomish/Goblin engineering will be gone but then reappears upon relog and the quest to choose a specialization is never available again.
