Update zoom report and add section on Emma #46

Updates and adds screenshots and detail to the section of workshops.qmd about getting zoom reports. I also added a new chapter about mailing list management with Emma.

Closes #26 Partially addresses #34

Going to merge this an open an issue about email listserv. We are moving away from Emma soon-ish, so no point in working too hard on documenting it.
