Make the user pool email mutable #16

Ported from https://github.com/douglasnaphas/madliberation/issues/329. I'm going to apply the fix that worked as described in this comment: I'm going to delete the user pool by commenting it out, and then I'm going to re-deploy with the user pool un-commented, and mutable set to true for the email attribute.

Done, re-deploy build succeeded, closing.
