Remove 'sub' from JWT payload #123

Prior to the finalization of the 1.0 specification, a 'sub' field existed in JWT payload sent to CDS services. It was added to the sandbox's functionality with https://github.com/cds-hooks/sandbox/pull/34.

In the course of ballot reconciliation, it was ultimately decided to remove this field from the specification in https://github.com/cds-hooks/docs/issues/356 . However, it has yet to be removed from the sandbox.
