Remove unused properties in the user.json file #530

And since we're focused on lite flow only, I removed the if/else in the benefits table, since we're not using security questions (and thus not viewing the more complex table)-- don't worry, we can go back and find it in this PR if we want to copy pasta🍝 it back

Updated the cypress user fixture to match the user.json changes
