Cleanup of `Rendering.cpp` and `Rendering.h`

This issue relates to cleaning up the code and repo for raster image loading, here specifically in the Rendering.cpp and Rendering.h files. See issue #69 dedicated to raster image loading in general. The overarching goal is to clean up all code as much as possible before merging to dev, and then to main.

Suggested improvements:

[x] Check that all functions are doc commented
[x] Sort includes systematically and alphabetically
[ ] Refactor code: Maths functions could be pulled out and unit tested.
[ ] Add more unit tests in general

I am assigning Eimen to this issue as well since we are both involved in the rendering code now. Let's discuss what we need to do to clean all of the files up during the team meeting on April 8th, 2024.

I'm not sure any more work will be done here, other than a refactor of Coordinate structures. I'm closing the issue, but it could be re-opened in the future if more work will be done.
