Set up a next STAC sprint day to get extra coverage, on datasets:

Sentinel X: on tape, various missions, products etc
eProfile: lots of instruments from lots of providers
MIDAS-Open: lots of sites
CRU TS: regular netcdf data
ERA5: lots of files, but a small number of Items
MODIS: includes object store

Each of the above should demonstrate different aspects of the system
