Use-Contractkit to point to WalletConnect run instance #8620

We've experienced several instances where the cLabs run instance of WalletConnect server has gone down and we cannot connect to the Waku network.

Point the use-contractkit modal to the WalletConnect team instances of the WalletConnect servers.

Ensure that the @celo/wallet-walletconnect package in the monorepo is also updated.
