Making tests run again #5

Hello,

the current tests are failing because of some minor updates and some requirements without upper limits. I updated the dev dependencies and dropped python3.7 Support since it's EOL now. I also removed pypy from the matrix because the latest cryptography package is trying to build wheel which fails in the official pypy image.
