Small Corrections and Rewording, Mostly README.md

Changes made in README.md:

• Replaced all instances of utf8 or utf16 with UTF-8 and UTF-16
• Added link to this Wikipedia page under first header "Ropey" (also reworded this part)
• Added link to examples directory above the "Example Usage" code block
• Bolded first sentences of each bullet point under "When Should I use Ropey?"
• Changed capitalization of each header to sentence case
• Made LICENSE.md under the "License" header a link.
• Added "Used By" section that contains 5 popular projects using Ropey
• Removed double spaces
• Small rewording/grammar/capitalization in a few places possibly

Changes in code:

• Replaced all instances of utf8 or utf16 with UTF-8 and UTF-16 in documentation

Read over the README.md carefully and change anything you don't like, such as the wording used or the projects shown under the "Used By" header. Thanks for this library, I'll be using it in a text editor I'm making soon. Also, does this crate need to be updated on crates.io?

Thanks for the PR!

Although I appreciate your enthusiasm, a quick skim of the PR gives me the impression that these are just stylistic changes that come down to taste. I did a kind of statistical sampling of the changes, and of the ones I looked at, I either preferred what was already there or it was a toss-up.

Also, does this crate need to be updated on crates.io?

We generally only make releases if either:

1. Bugs have been fixed.
2. Sufficient changes have accumulated to justify a new release.

Neither of which are the case right now. Ropey is a pretty stable and more-or-less "finished" crate at this point, so there's not a lot of new development, and releases are infrequent. But it is—and will continue to be—maintained.
