Clarify policies output from initial setup #102

feedback from empathy day:

After the creation we list the policies, and there’s only one (and if that would be the case, seems redundant). But it says A few policies will be in place in addition to the policy you just created. But I only have one policy, expected?

Regarding listing the policies the first time, we want to verify that the policy worked, it gives the user the feedback that they didn't run into an error.

Regarding multiple policies, when I test this I get some policies pre-loaded with Chainguard Enforce, but maybe that is because I am not a fresh user account. Would we be able to test this on a fresh account?
