@joeeoj does JIRA come with "Resolved" or "Closed" as the workflow default for finished tickets? or does one have to define their own?

I think Closed is the default. Checking the JIRA admin settings, we seem to be using both Closed or Done across different projects to both mean a ticket is complete. So I would try those two.
Resolved looks like a default status that we grouped with "done" things, however that doesn't seem to be the original intent. The JIRA definition is: A resolution has been taken, and it is awaiting verification by reporter. From here issues are either reopened, or are closed. So that would mean Resolved is more like "In Review" that closed. But it is only tied to a couple of test workflow schemes that aren't associated with any real projects, so it is not in use anyway.

Create a button to hide or show resolved or closed standalone issues.
This is because we're I'm not generally interested in them, and it could save a lot of space.
Make it so that hidden is default as well.
