Fixes intersphinx bindings for tiledbsoma
Adds more intersphinx bindings (scanpy, torch, etc)
Fix wrong formatting
Other misc fixes (typos, dates, etc).
Updates copyright

This has been tested locally and the docsite renders correctly.
