Add new schema information to doc-site #665

618 and #612 incorporated schema changes. Add that information to https://chanzuckerberg.github.io/cellxgene-census/cellxgene_census_docsite_schema.html and make sure to note that different Census data releases have different schemas, importantly `latest` vs `stable`
