Adding initial datasets with commits for the following projects:

Elasticsearch -> OpenSearch
Redis -> Valkey
Terraform -> OpenTofu

Added notebooks with WIP analysis for organizational affiliation data for:

Elasticsearch -> OpenSearch
Redis -> Valkey

Added a README with links to all of this plus a link to the document where we can write the report along with a list of next steps and work that people can help with.
