Moved the script that collects the GH data from Dawn's personal GH account into the CHAOSS project
Updated README to remove the script TODO and add one about validating the data. Also added a link to the OpenUK meetup where the research was presented
Updated the Valkey data to have a full 6 months of data and used this to test the script after moving it from my personal GH account
