chore(elasticsearch): update to es8 #76

In this MR:

Add missing dependencies in requirements.txt
update to elasticsearch8:
- update requirements.txt
- remove _doc from mappings
- remove doc_type from api
- count value is in hits.total.value
- env.dev must contain a password for authentification on elasticsearch
