fix(dependencies): Upgrade to operator-sdk v1.25.0 #29

Upgrade steps from official docs:

Upgrade packages due to trivy security vulnerability scanner, see https://github.com/checkly/checkly-operator/pull/29/commits/7f35cb54e861a6074008a40c6bd844c692a5820a

We omitted the upgrade related to multi-arch builds as we're doing those in CI and we don't use the local docker-buildx features
