infra: enable more platform runs in CI #362

Adding more platforms in the CI.

The combination of https://github.com/checkstyle/patch-filters/pull/361 and this completes https://github.com/checkstyle/patch-filters/issues/113 .

Tests run: 119, Failures: 2, Errors: 0, Skipped: 0

Windows run failed as expected as https://github.com/checkstyle/patch-filters/pull/361 is missing. It is required for Windows to function.
