We're using Auth0 for auth right now. When you log in, regardless of how you choose to sign in with Auth0, it always asks you to make an Org. I believe this is because we have the invite link feature suppressed. so changing that might completely change this behavior.
It seems that even with Auth0, as long as you have an existing session, you can bypass auth0 by going right to /admin. Then you can see what orgs your user is a part of by clicking the drop down in the upper right hand corner.
