add: settings_model in the intro #100

Changes

Added an explanation about settings_model and a link to Pydantic Model before the settings example, otherwise it talks only about settings_schema but then uses settings_model in the code

@nicola-corbellini sorry for this one, I noticed that the example code uses settings_model but before it does not talk about it and promised me to adjust it this morning 😸
