Currently, and the new design for tavare 3.0,
There's no ability to toggle features on a per server basis, which could be a problem where the flexibility you want to add. The database should have a new set of tables, which will expand off the existing server table. Should have a table for features, and then it should have a joining table to show what servers those are available to.
