Description

Add the config.py file in core to setup user-defined settings using pydantic_settings.BaseSettings as in https://github.com/childmindresearch/ctk-functions/blob/main/src/ctk_functions/config.py

Tasks

[ ] Follow example to create config.py that has all desired user settings that may differ from default values for wrispty processing (namely, data_directory, epoch lengths, thresholding for non-wear detection and physical activity data)
