[TB] Fix coverage interface connections/parameters/coverpoints for AXI

Fix the coverage interfaces that are used to bind coverpoints to the top-level ports for soc_ifc and caliptra_top. Migrate signals related to APB over to AXI, and ensure AXI-related parameters are visible in the coverage interface context.
