move to the common src-layout, which moves zennit to src/zennit
this prevents tests accidently importing the zennit directory instead of the module
updated the appropriate references in setup.py and tox.ini
added extra requirements docs and tests
removed docs/requirements.txt
use the extras_requirement "docs" in .readthedocs.yaml
