Ert tests don't work by default in elisp projects

When an elisp project is created, ert tests (make unit) don't just work:

test files should be suffixed by -test.el (not -tests.el as is currenntly the case)
ert-runner needs a .ert-runner file to know what to load
undercover is not configured to instrument source code
