It pre-populates the user's email client with information about the app version, OS version, saved game, etc. And of course the user's name and email address will be on that email when it's sent. This would complicate filling in the new Data Safety Form which is required by 2022-07-20. Instead, I've replaced that system with links to either leave a review in Google Play or add an issue to this issue tracker. Any and all information is then given by the user to Google/GitHub directly, so the app's data safety situation is simple: it doesn't collect anything.
