Are you sure this isn't an issue with windows 11? A randomly disappearing taskbar doesn't seem like an app fault, may be other users with this outside of gbstudio.
Gbstudio is built on electron, which is built on chromium. Depending on the version being used (1.2.1, 1.2.2, 2.0b4, 2.0b5, 3.0alpha from source) will include a different version of electron/chrome, with os specific updates. We need the gbstudio version in the bug report.
In this case, your pc components like, how much ram you have, disc/ free disc space remaining, or whether your cpu is fully supported by win11, might point towards an answer.
My general idea would be storage or ram are at their limit when gbstudio is open/installed, or how windows 11 handles taskbar previews.
The taskbar used to be a function of explorer.exe, so you should be able to open task manager (ctrl+alt+del, or ctrl+shift+esc) kill explorer.exe process, and then use run (win + r, or from task manager) to type explorer.exe and fix it.
