Harmonize tables layout #26

Are all the tables shown in the same ways? If not harmonize them.

Spec argument tables are now generated like this (see 22-transform.qmd):

specs_tbl(topic = "transform-main", caption = "Frequently used spec arguments in the `transform` spec")

@jlivsey feel free to add new data and use it some chapters. Once we know what we want to do, we may collect the data in a systematic way.
