Reintroduce support for dropped platforms

Reinstate the platforms dropped from the build workflow in 6dc81cf.

Motivation and context

This repository should support all platforms inherited from https://github.com/cisagov/skeleton-docker.

Implementation notes

• The platforms were dropped to merge #5

Acceptance criteria

• [ ] The build workflow is successful on all original platforms

There are designs to inherit a fix from https://github.com/cisagov/skeleton-docker. This issue will remain blocked until then.
