Update Etherpad-lite to 1.8

A new long waited release https://github.com/ether/etherpad-lite/releases/tag/1.8.0 to Etherpad has just been released. As we have had many issues with Etherpad in the past. And as it should be more secure and stable we should upgrade to new version ASAP. TODO:

• [x] - Check manually if UI is working normally and as intended
