We should use a cheap and fast blockchain that has a large community (EVM compatible). Contenders are:

• Polygon
• Gnosis Chain (xDAI)
• Celo
• Fuse
• Fantom
• Avalanche

Anything else?

Key things to consider:

• How easy it is to bridge to Ethereum and to a exchange? (Polygon is by far the best option here)
• Is there enough liquidity on the stable coin used? (Polygon is leading here as well)
• How fast is it for quick settlement?
• Possibility to get a grant to support the project (Celo and Fuse might be more interesting for this)
