No deliberately disabled. I will set up squirrel mail on root@ and remove forwards? Or will allow mail
No cpanel on machine, or I have lost the link.
Will have to move all this to another machine soon, but would be good to know what to do.

Looks like the local firewalls are down
You should probably be able to telnet to Google's mail server (where Holly's MX record points).
So my guess is that its configured at the VM level. Could you take a look or provide logins for the cpanel please?

Postfix is already setup and should be able to forward the aliases. The trouble is contacting the destination and would likely exist for squirrel too. I'll see what else could be restricting it. I'd suspect the UNSW firewall rules which I thought you might have access to. I'll contact it if I can't solve it.

Looks like UNSW is blocking outbound port 25. Can you raise a ticket? They might query why I am working on that server.

Not likely they will open as I think I had a bout of spam a few years ago
I have set up mail on an external server
I should transfer it all there
I have just been confirmed as a lecturer in Engineering and IT at UTS. I will see if they will supply a virtual machine, or just expand my external one
