Consider adding katex as an option #37

Mathjax can be slow. Might be nice to offer Katex as an alternative. Toggling between mathjax and katex can be done via config.

Might be better to mention Katex in the readme, and note that it can be used in place of Mathjax.

closing because jekyll ships with mathjax built-in. I opened this before I knew that. If anyone wants to add katex it's super easy to do yourself.
