Path handling #10

We curently do not support dataset specific subpath, e.g. ./data/era5. This becomes an issue with multiple datasets (downscaling etc).

This requires some minor updates to the documentation/getting started. But I think it's worth it and necessary. I take care of the code and you the docu?
