doc: add section "Output & Logging" #96

Of note: Just in case folks had been overriding logging deps in the past, let them know clj-watson is now tied to SLF4J and Logback.

@seancorfield I think that good enough for now, if folks want to control logging/output more they can let us know, and we can assess/adapt.
