Split up fields & utils into subpackages

Split up fields & utils into subpackages to avoid dependency issues. This doesn't break existing imports.
Move Enum into new enum.py module (similarly to Python 3, which comes with an enum module)

The fields package is fully split up, the utils currently isn't finished.
