Tidy up some dependencies and docs #92

This change includes:

tidy up of dependencies with dependabot open PRs, gson was not needed anymore and jackson was replaced with an already included dependency (apache cxf-rt-rs-json-basic)
tidy up of the documentation with updates about how to test the plugin and how to package and develop
update on the supported versions as for Confluence 9 further changes are required to use the plugin
removal of Docker files used for testing that are not relevant anymore

There is no change in functionality of the plugin, it was tested in the latest JIRA, Bitbucket and Confluence 8.5.6 versions
