@myedibleenso Should this be a fixed list of Java versions, or a user-defined set of versions?

If fixed, the lum-ai outline includes versions 8 and 11, with an exception for 17. Should this be adopted here, or a wider variety of versions?

I think we can use the outline pretty much as-is (I wrote that). That makes it easy pretty simple for a user to modify the list of versions. We could always over-engineer things to make the versions for testing to be part of the cookiecutter creation prompt : )
