try converting to `zola`

for a bunch of pain reasons:

• breaking changes between hugo, theme, local html is continually painful
• shortcode templating in more horrible go templating bringing helm trauma
• need custom shortcodes for things anyway (#21) so have to touch templating a lot
• dark theme is pretty ugly

but also just want to instead use zola with an ecosystem i am familiar (rust with its libs) now that i have found a good prospectiv theme to start with:

• follow (install docs and use example cfg
