Update recommended release to v.2.1.0 #306

Hi @anigamova, thanks for doing this. I'm wondering actually if we can't just remove the sparse checkout scripts at this point. They were useful in the past when we had a lot of analysis specific areas in the package, but now there isn't much difference wrt. just checking out the whole package. What do you think?

@ajgilbert Sorry, I missed the last comment. I think we could remove it, but first we should update the tutorial docs, because I think most of them use the scripts you mentioned. I will try to do this in the next couple of days
