Adding some physics model descriptions #914

A first attempt to try to document at least some of our PhysicsModels. Here i've added just a couple of BSM ones, @jonathon-langford is adding more from the suite of SM (couplings, mus, STXS, EFT) that we have too

Have now added (most of ) the Higgs couplings modifiers. Would be nice to include EFT and signal strength models but for now this is probably ok to merge
